WINE NOTES
Aromas and flavors of cherries, candied berries, chocolate, and baking spices grace this Merlot. This wine has rich but soft tannins and is balanced by supple acidity. This classic Merlot comes from one of the oldest vineyards in Mendocino County. The vineyard sits in the eastern bench of Redwood Valley and has rocky, gravelly clay soils, which helps produce this Merlots concentration. The wine was aged in neutral barrels for over 2 years until bottled.
FOOD RECOMMENDATIONS
This wine is a great pair with pizza topped with salami, sausage and mushrooms, steak with a red wine reduction, or stuffed roasted portobello mushrooms.
TECHNICAL INFORMATION
Length/Type of Fermentation: Crushed into open top fermenters with 4 days of cold soak, pumped over and punched down twice a day for 14 days.
Length/Type of Aging: Barrel aged a total of 24 months in combination of French, American and Eastern European oak.
