WINE NOTES
Our Sauvignon Blanc comes from two vineyards; first, a newer vineyard located near the Russian River in Potter Valley, and the second being a vineyard on a benchland in Redwood Valley also overlooking the Russian River. 100% fermented and sur-lie aged for 8 months in neutral French Burgundy barrels. This vintage displays a beautiful pale straw color and bright aromas of passionfruit, grapefruit, and honeydew melon. Uplifting flavors of ripe melon and bright citrus combine to give this Sauvignon Blanc a luscious but bright mouth-feel. Rich flavors and balanced acidity lead into a long, lingering finish.
FOOD PAIRING
Enjoy with chicken piccata, pasta or risotto with fresh spring peas, asparagus, and vegetables, or oysters on the half shell with a bright mignonette. A fresh calamari salad with arugula greens and this Sauvignon Blanc is what the good life is all about.
TECHNICAL INFORMATION
Length/Type of Fermentation: The grapes hand harvested at an average 22.4 degrees brix. The grapes were crushed, pressed and cold settled before being racked into neutral French Burgundy oak barrels. The wine was then barrel-fermented, “sur-lie” aged for 8 months, not allowed to undergo malolactic.
